Thanksgiving 2022

We had a fantastic Thanksgiving holiday. This year Alison and I were home and celebrated with her family. The celebration began in earnest on Wednesday after work. Skylee came over to help Alison bake pies. I also helped out. This year we made four pies - pumpkin, lemon meringue, coconut cream, and chocolate cream. They all turned out pretty well, although there was one issue - more on that later. 

After making pies Alison's siblings came over to celebrate Blake's birthday. Alison and I made Salt & Straw ice cream to mark the occasion. We went with the double-fold vanilla since it is Blake's favorite ice cream flavor. It was a hit. 

Alison noticed the meringue on her lemon meringue pie was separating from the crust before we went to bed on Wednesday night. This led her to research why it was separating at 1:30am. Since she had developed a hypothesis she decided to scrap the lemon meringue pie and make a fresh one on Thursday morning. This one turned out even better than the first one and the meringue didn't pull away from the crust. Success. 


Alison also made rolls and we pitched in to help get set up for our Thanksgiving feast. Once everything was well underway Alison and I took a break to head out to visit the construction site that will be our new home. We were surprised (and a little sad) to see people were there working on Thanksgiving. They were adding the trusses to create the roof of the garage. While we were in the area we went for a walk around Daybreak Lake. 

When we returned to Blake and Debbie's it was go-time. The turkey was ready and the rest of the family arrived. We shared a bounteous feast. As we ate we went around the table and shared something we were grateful for. After dinner, we lounged, watched football, played games, and ate delicious pie.

There is much to be grateful for this year. We are grateful to Blake and Debbie for opening their home to us to let us live here until our new house is complete. We are grateful construction on our house is underway. It is way more fun now that it is starting to resemble a house. We are grateful for our dog Tex. He brings so much joy into our lives. We are grateful for our careers. We both have jobs we love, co-workers we consider friends, the flexibility to travel the world, and lots of opportunities. We are grateful for our family and friends. These relationships provide so much happiness.
